American Sausage & Broccoli Scramble
This is the dinner Morela reaches for when the fridge holds sausage, a head of broccoli, and a carton of eggs and not much of a plan. The sausage browns first so its fat seasons the broccoli, then everything gets folded into soft, just-set eggs — one pan, no shopping trip.
It's forgiving by design: the eggs stay moist because you pull them while they still look a little underdone, and a handful of cheddar at the end is optional but hard to skip. Spoon it straight from the skillet, or tuck it into warm tortillas for hands that won't sit still.

Ingredients
- 1 lb ground pork sausage (mild or hot, your family's preference)
- 3 cups broccoli florets, chopped into small bite-sized pieces
- 8 large eggs
- 3 cloves garlic, minced
- 2 tablespoons whole milk or half-and-half
- 1 tablespoon olive oil or butter
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese (optional but recommended)
- 2 tablespoons water
Steps
- 1
Set a large nonstick skillet over medium-high heat. Add the ground sausage and break it apart with a wooden spoon or spatula. Cook for 5 to 6 minutes until browned and no longer pink. Transfer the cooked sausage to a plate lined with a paper towel and drain all but about 1 tablespoon of fat from the skillet.
- 2
Return the skillet to medium heat. Add the olive oil or butter if the pan looks dry, then add the chopped broccoli florets. Sprinkle with a pinch of salt, add the 2 tablespoons of water, and cover the skillet. Let the broccoli steam for about 3 minutes until it turns bright green and is just tender.
- 3
Remove the lid, add the minced garlic, and stir for about 30 seconds until fragrant. Be careful not to let it burn.
- 4
While the broccoli cooks, crack the eggs into a medium bowl. Add the milk, salt, and pepper, then whisk until well combined and slightly frothy.
- 5
Return the cooked sausage to the skillet and stir it together with the broccoli and garlic so everything is evenly distributed.
- 6
Pour the egg mixture over the sausage and broccoli. Let the eggs sit undisturbed for about 20 seconds until they just start to set on the bottom, then gently fold and stir with a spatula, pushing the cooked egg toward the center and letting the uncooked egg flow to the edges. Continue this gentle folding for about 2 to 3 minutes until the eggs are softly set but still look slightly moist.
- 7
If using cheddar cheese, sprinkle it over the top, remove the skillet from the heat, and cover for about 30 seconds to let the cheese melt.
- 8
Taste and adjust salt and pepper as needed. Serve immediately straight from the skillet, spooned onto plates or into warm tortillas if you like.
